Lath and plaster kitchen ceiling replacement

Does the lath and plaster need to be removed or can a stud frame and plaster boarding cover the existing ceiling

I would personally go down the route of using an mf system as it will carry load from existing joists and perimeter wall creating no sag as creating a timber frame beneath would eat up alot of ceiling space as doing properly would need chem fixing ledger boards and joist hanging off of them, and depending on span would also determine timber depth,
