copper or plastic

i will be getting 2 bathrooms refurbed. what is the best option for the pipework in terms of quality and longevity and future leakproofing? i.e. is it better to stick with copper or is plastic quick fit pipework better?

Copper offers the best longevity and proven quality, generally lasting 50-70+ years. However: Modern PEX (plastic) pipework with quality fittings is easier/quicker to install (meaning fewer joints and less labour cost), resists corrosion, and handles freezing better, offering a very long lifespan of 30-50 years and often considered the preferred choice for modern renovations for its lower cost and reliability against leaks caused by installation error or freezing. The quality of installation is the most critical factor for leak-proofing with both materials.
