New tiled roof leaking for 6 weeks onto newly plastered and plaster boarded ( plus insulation)

We had an issue with a leaking newly tiled roof ( it is a single story low pitch roof with two velux) sadly the leaks didn’t start until the insulation and plaster boarding and plastering was completed and dried - the builders believe it was a problem with the fact that venting wasn’t put in and the leading wasn’t done correctly but that took a month for them to find that out. So the water damage continued onto the ceiling and the walls for around 4 weeks ( and is still occurring in one area) - some are saying that it is fine to leave it like that and just paint it once it is dry - but there are darker patches where it leaked and one large crack and mould. I am concerned that the insulation ( like a quilt) and will be damp and the plasterboard underneath and will have mould inside or will keep staining the paint once we get to that stage or that it will look unsightly.

Check around velux , the construction joints. I might be the source of water ingress !
