Central Heating on Timer Vs Thermostat Controlled

I have a boiler with an analogue mechanical timer that I can set for the central heating to turn on and off at certain times of each day. It's the same times each day so it cannot be, say, 6pm - 8pm on a Monday and 7pm to 9pm on a Tuesday unless I physically change the times on the Tuesday. The boiler is situated inside a cupboard of the spare bedroom. I was thinking, because I generally do not need the heating on at the same times every day, instead of changing the set times each day I could keep the central heating on constantly but use the thermostat dial in the living room to effectively turn it on by turning the temperature up until the boiler switches on, and off by turning the temperature dial back down again. Can central heating be controlled this way? Is there advice against this methodology? And can a boiler suffer damage if it's constantly on even if it's not fired up to power the central heating? Thanks
