Dry line with plaster board dob and dab. Then skim. Corner beads and metal stop beads.

Put a vent in also and if you are blocking off the fireplace make sure you block it off from the top with a c cap or chimney cowling

If you think in the future you may use the fireplace, a backing coat of either bonding or sand and cement before finish plastering may be better than drylining the walls.
