How to fit a wood fire surround on an uneven wall

I have a reclaimed wood fire surround which needs fixing to the wall. The problem is that the wall is somewhat uneven - the surround is flush at the bottom but sitting away from the wall at the top. Should I be looking to chip away the plaster, fix the surround to the brick and then re-plaster? I know this is how cast iron surrounds are usually fitted but one tradesman told me he definitely wouldn't do this for a wood surround. Can anyone help? Thank you!

Basically yes. Doing this will check two things. Is the wall ok. And likely the old plastering thinker at bottom. And secondly that it’s fix to the brick then plastered around will hold it in place.

If its a wood surround you're better off to scribe the surround with the wall, if you bury it in the plaster you will have a constant cracking around the edges as the wood moves,
