Converting out building into a office, limited access to sides

Hi all, I might have to speak to an architect or structural engineer on this but I wanted to better understand my options and general routes as a first point of call, at the least educate myself on the topic at this stage. I have an out building with brick and block work at the front with stud and marine ply on the sides. The rear just butts on to a garage built with block work. Not ideal. The roof needs replacing and I thought it might be worth throwing a bit of money at it to to convert it to an office. I was thinking potentially build up side walls but we cannot access the sides, making it difficult to render if we go with block work. I’d like to convert and insulate the room but am not sure what are options are. For example, do we need to build side cavity walls with brick and block or can you buy stuff that doesn’t require rendering. Ideas welcome!
