Water leakage in Loft Cupboard

There appears to be some element of condensation (water ingress) on the pitched roof plasterboard internal ceiling (not plastered) within the loft cupboard space From recent observations, this occurs when there are very cold temperatures (ice or snow conditions) but doesn’t occur when it rains. This has been a pattern over the past few days. I have pictures but can’t post these within this question. I will gladly appreciate if someone amongst you knowledgeable tradesmen could furnish me with a simple explanation regarding the reason for this condensation. The roof had just been constructed as part of a loft conversion last year.
