New bifold door - Should you fill gaps in brickwork before putting plasterboard on?

Builders knocked out a wall pretty quickly for the bifold doors to be installed. Installation looks nice, but tapping on the plaster board surround of the bifold doors, I hear lots of hollow sounds. I had asked the builder to make sure he squared up the gaps in the internal brickwork before putting on plasterboard, but he obviously hasn't. I asked him about this and he tells me that's how it's done. I don't have anything to worry about. But it feels a little odd just to stick plasterboard on brickwork made patchy as a result of surrounding bricks getting knocked out. Should the builder have filled the gaps in the brickwork before putting plaster board on, or is it completely unecessary? Thanks!

He hasn’t done anything wrong most people knock out wall and dot and dab plasterboard straight on

Nothing wrong with what the builder has done. Plasterboard straight onto the brickwork to make the reveals square and smooth 👍

As long as there is cavity closer, (cavity wall) sticking the board should be fine.. Obviously it will need to be sealed outside.

I am not a builder, but personally It should have been a clean cut through the brick
