how are plasterboards protected from condensation

vapour barriers are normally used behind the plasterboard to protect the construction from condensation but how is the plasterboard it self protected, it seems the vapour barrier will only protect the structure behind the plasterboard but what about the plasterboard itself how is that protected?

Condensation would only adhere to cold walls. If there's good insulation behind this shouldn't happen too much. Always air a room to help reduce moisture build up.

It depends on the application. If there is high humidity you would use a moisture resistant board, commonly used in bathroom areas. But these boards are designed to be directly tiled over, not applied with a skim coat. Insulation and vapour barriers are a good practice depending on where the condensation is being generated. Condensation forms where heat meets a cold surface generally.
