Is full re-plumbing necessary when renovating a bathroom?

I am having a bathroom replaced that was installed 40 years ago. It has not had any problems during this time. The position of the bath is to be changed and a separate shower unit is to be added. I have two questions: 1) Is it appropriate to remove all the old plumbing and start from scratch or is tying in to existing copper pipes safe? 2) I have a traditional gravity-fed hot water system and am now being told that I will need to replace the hot water tank with an unvented one, to increase the pressure. This will add £1000+ to the job, so I would like to know it it is the right thing to do. As the plumber has not replaced the old copper pipes (1) will this create a risk of the pipes rupturing?

It is better to renew all the pipe work

I wouldn't worry about the copper too much. Obviously check for any dammages on pipes and replace where necessary. I would 100percent re new your waste pipes as 40 years of grime is no joke. If you need more pressure then I would recommend a pump to be installed as should be cheaper than £1000 by far.

No need to change the pipes but it still depends on the changes on the spot, it's hard to figure out exactly what it's like.

If it’s a full refurb, and the floors are up you can check all pipe but additional pipe work will be required for the repositioning of items plus new shower, so I would tend to replace it all as good practice.also with it been gravity feed a pump might be required for shower to have decent water pressure.

As the pipework is over 40 years it may be beneficial to change these, however not a must. Also you could consider a pump to increase the pressure.
