Use of epoxy grout

Hi there I am buying a new build house and the ground floor is a concrete beam & block with wet UFH in screed. “Her indoors” has chosen a porcelain marble effect tile (Porcelanosa Carrara Blanco Brillo). The builder says he only makes 2 types of grout available to the tiler: cement type white or grey. We don't want white grout as it won’t be practical; grey grout wold spoil the effect as it would lead to a grid effect. There is an area of 100 sq metres to cover (hall, kitchen, living room utility & WC). For durability and stain resistance, I have asked if we can have Mapei epoxy (Moon White). I know this is about 3-4 times more expensive than standard grout, and more difficult to work with. Could somebody give me an idea of how many extra man-hours would be required to use epoxy grout compared to standard grout on 100 sq metres. (Tiles are about 600x600mm). Any advice/info greatly appreciated.
