A stud wall is removed to create an open space, what's the next to finish off?

after partial-length of a wall is removed, how to finish off the job in most situations? to plaster it? or to use polyfiller? Many thanks.

if you removed the wall there is a gap of 120 mm and you have to cut the old plasterboard between the two old timbers and put new plasterboard and if there is new plasterboard it's to deep need to filled with bonding and put plasterboard and finally multifinish plaster.

I'm assuming some of the existing stud work is now showing. 2 options are:
1. Line out the opening using plasterboard, apply skim beads to all edges before plastering to give finished edges.
2. Line out the opening with planed timber sized to be flush both sides.
