What type of paint to use on busy kitchen ceiling?

We do lots of steamy greasy cooking and have never had stains on our ceiling. In 16 years it’s been painted twice and was still perfectly(!) white. We don’t know what the existing paint is but it seems to have a glossy appearance. The ceiling is newly plastered with a few grease marks leaching through it, does that need to be taken into consideration when choosing ceiling paint?
Are you a tradesperson and able to answer this question?

light sand down, use a stabilising primer then 2 coats of oil base paint of your choice...pref eggshell as in crown or dulux.

From my experience i would give the ceiling a coat of oil base paint to kill the stains which appear through the newly plastered ceiling undercoat preferably let it dry for a least 12 hours then lightly sand with 180 graded paper dust off then apply two coats of water base eggshell the first coat will glide on easy but the second coat of eggshell will be more stiff but remember to leave ample time between coats it might feel dry when you touch but thats only the surface so be patient, remember Rome wasn't built in a day !!!!! Wash down the ceiling a flash/light bleach,slow 3 or4 hours to dry. Then apply 2 coats of Zinnzer stain block stabiliser paint. Slow overnight to dry, and then put on your preferred paint Finnish. Eggshell,Matt or vinyl.

I would use an oil based undercoat and go over the stained areas, then just use a vinyl Matt brilliant white 2 coats 👌🏻

Right, stain block the grease marks first
Then buy a washable quality emulsion. Do not paint your kitchen ceiling in an oil based paint.
