How do I deal with one joist higher than the rest when putting down next floorboards?

We have karndean flooring for our hall but the floorboards underneath were poorly fitted and some had sunken. I have laid 6 rows without any problems and on the area where the previous board was sunken my new board will not fit. I have laid the board across the joists and it is see-sawing across 1 of the joists in the middle(the board is covering 5 joists in total). Will I need to have this joist replaced or will it need cut down to the size of the rest?

You can use spacers or packers on the lower joists to retain the level. Use the 'high' joist as your new level and add packers to all other joists to get the plum level you need. If there's a huge difference in height (25mm+) from example 'high joist and furthest away' then I would recommend laying plywood down on new leveled joists so you retain the sturdiness of the floor before laying your wood flooring. You basically have 3 options.
Plane or cut the high joist down to the height of the others.
Use packers on the low joists to create a level floor.
Remove and refix the high joist so all joists finish at the same height.
Just choose the option which is easiest for you.

Carndean should only be laid on a completely flat surface with no gaps or imperfections .to this end a surface of 5mm hardboard or plywood sheets screwed or nailed at 300 centres over existing floorboards and joisted floor with the proviso that this floor is completely flat. All joints should be perfectly interfaced without any gaps. You are then ready to lay the carndean flooring.

You should have checked your floor levels before starting to lay your new flooring all your trying to do is making a silk purse out of a sows ear
