Building side extension up to roof level

Would it be ok to build a double storey side extension in blocks (with cavity) up to roof level and then leave it over winter and put the roof on next spring?. Would the walls be structurally ok left like that?.
Are you a tradesperson and able to answer this question?

Yes it would be ok, but I would cover the tops of the walls including the cavities to minimise the amount of effervescent staining to blocks or brickwork.

Yes it's a good answer,but the reason for covering the blockwork is mainly to keep the insulation dry,the blockwork shouldn't suffer from efleresence if its built in dry weather and frost free
