Most causes of damp spots are either water getting in i.e leaks or trapped i.e condensation. Regarding insulation and plasterboard the most common mistake is to use the wrong size insulation. There should always be a gap for airflow between the top of the insulation and the roof itself but most people tend to cram in as much as they can!! Airflow and ventilation, not types of plasterboard prevent this problem. For extra piece of mind use Foil Backed Plasterboard.
I hope this helps

Hi , sorry for the late response
In the situation you have described, it is best to use insulation such as kingspan , as this has a vapercheck coat.
However it is also important to allow for good airflow
Hope this helps

Usually 100 mm Celotex between the joists With enough room for airflow behind the celotex and then 25/30mm insulated plasterboard on the vaulted ceiling as long as there is airflow and the roof is leak free it should be good
