Install uPVC window in a single skin brick shed

Hi. I've got a single skin brick shed in my garden which currently has a wooden framed window with a single pane of glass. The frame is deteriorating and I'd like to replace the window with a used uPVC window. My question is, if I can't find a window of the exact size (taking into account the 5mm gap needed around the window frame and the sill), can I use a much smaller window and somehow pad out the existing brickwork, e.g. with an outer wooden frame, then secure the window through the outer frame and through to the brickwork? If this is possible, are there any pitfalls I need to be aware of, issues with damp, water ingress, etc? Thanks
