Recommendation for plastering solid walls

Hi everyone, I'm hoping for some advice regarding plastering the internal walls of our house, which was built around 1800 and is solid wall construction. Previously, we had some damp patches in the plaster and I believe this was partly due to condensation and the walls not being able to breath. Since then we have solved the condensation problem (improved ventilation & PIV) and removed the old plaster. We now have walls that are back to brick, but not sure how best to proceed. Considerations have been... 1. Lime plaster, 2. Bauwer breathable plaster, 3. Baton and plaster board, 3. Dot and dab and either thermal boards or insulation backed boards. Any advice appreciated - we're looking for the simplest, least expensive solution but without the original problem (patches of damp) recurring. Thanks. Dan.
