Plastering a 3 bedroom terraced house

Hi there, As part of my renovation project I am getting the whole house replastered to include walls and ceiling room by room on each floor. It's an old 1940s house that has not had any plastering work done till now. Meaning walls just had wall paper changed from time to time and ceiling just used to get painted. Does existing plaster needs to be hacked back to existing brick work using a bolster drill for every room wall that I come across in preparation for plastering and rendering. Or would you say that it only needs hacking where it's badly damaged like near the window areas. Another thing I was told by some one is that it's possible to just plaster over the old plaster and do what's known as bonding. I've seen different products in diy stores such as thistle orange bag, purple bag bonding etc... What is the best way round this as I don't to see shorts cuts especially if the house is quite old..? Any advice will be appreciated. I want to see a good finish.
