Hi Wilfred. The plinths should be removable without having to touch the cabinets. If they're not then you may not have a standard kitchen as wherever you get a kitchen from i.e. Wickes, B & Q, Magnets etc the plinth fixing is virtually identical. Perhaps a bit more info on the type of kitchen you have would help with a more detailed answer.

not really most plinths use a clip system to clip onto the unit legs
if the gap is vertical then the plinth might need sliding along if the gap is horizontal then maybe use a plinth sealing strip at bottom to add some height

If it is kitchen cabinets you are asking about , yes is the answer , normally you can detach them as they are only fix by plinth clips . Then replace with new ones scribed to your floor

Sometimes the plinths are fitted to tight between floor and underside of cabinets, as above most plinths use clips, using a suction cup like the ones used for glass or floor tiles can help remove you plinths!
A very long time ago MFI had plinths that were nail onto the stepped back side panels and then waxed over to disguise to pin nail heads
