Acceptable silicone depth to fit/seal undermount sink

We have just had a quartz worktop installed and generally pretty happy. However, the templater said to leave a gap between the sink top and the top of the worktops. This would be so the fitters could shim the sink into place. It was fitted 4-5mm below the surface, with a view that it would be shimmed into its final place. However, the fitters did not touch the sink's position, so there is a massive bead of silicone between the sink and worktop now showing. I foresee problems with water, mould and general keeping it clean. Plus it doesn't look great. I would value any opinion or insight into this. UPDATE: The fitters have been back and while they were reluctant to remove the stone etc to access the sink, we agreed that I would craddle it from underneath and they removed the silicone and then clamped it into position for me (as the fitter) to cradle the next day when it was dry (to avoid dislodging the silicone) I appreciate the views and suggestions given and it gave confidence to push back against their "Industry standard" line.

personally the sink should have been clamped to within 2mm max of the surface to ensure good adhesion. i wouldn't accept this. sounds like a bodge and yes hard to keep clean and mould free! regards and best wishes..... Stephen ..

you could try and pack the sink up to the worktop if the sink has not been fixed to unit. dan.
