Window trim on top of the plaster or remove the plaster first, and best material?

I'm looking to fit window trims for the framed look as I think the current is too plain (plastered and bullnose window board). Just wondering if I should install the trims over the plaster or should I remove the plaster to bare bricks then install the trims? This will effect the size for ordering some new roman blinds. Is this a DIY job or better to leave for window companies when I'm getting new windows? If I were to DIY, what's the best materials to use, wood, MDF or plastic ones?

no need to remove the plaster this will give the joiner something solid to fix your trims to,please don't order blinds until finished as your inside size of window will change by about 25-35mm
