How to deal with an uneven floor?

We have a Victorian cottage and the floor in the kitchen diner is uneven. I believe it is all concrete or concrete and wood we are doing an extension and will want the floor levelled, is this a tough job and how does one go about it?
Are you a tradesperson and able to answer this question?

on a concrete floor we us a latex smoothing compound which is primed first.On the wood side normally use 6mm ply screwed every 10 cm,but depends on how far the level is out to the concrete (may need thicker).If the floor is still out of level we come across the whole lot with another coat of latex to finnish off ready for floor coverings.this process is normally a two day process as have to allow for drying times but every job is different.
