The main thing is the foundation .excavate area, lay MOT & consolidate. The slabs can then be laid on a wet mix or on a screeded sharp sand bed.

Foundations are first making sure the correct depth of hardcore is used and compacted then the slabs can be laid at the correct fall creating the run off for water. Once the slabs are laid in either wet or dry mix mortar (in my experience dry mix is the best as it sets slower making the bond stronger and is easier to use when levelling and doesn’t make as much mess as wet mix) pointing in is the last job after the patio has fully set as you don’t want to stand on it before hand. Again dry mix for pointing in is the best, this stops staining of the slabs, now you can buy a brush in mix, more expensive than the old way but looks better and works better! Hope this helps. Many thanks. Sam from SW Gardens & Landscapes.
