Thin slithers of roof tile at the verge and other issues

I have recently had my roof re-tiled and have a few concerns about the workmanship. I thought I was getting all new roof tiles but roofer used some of the old ridge tiles. The ridge tiles and tiles at the verge were bedded in mortar in freezing weather. When I queried this with the roofer he said it would be okay because he had used a stronger mortar mix [2:1] Is this usual? The tiles at the verge are very thin slithers of roof tile. Is this normal or has the job not been set out correctly? All advice about these issues is most welcome.

Hi when you set a roof out you would always start from verge giving a 60mm over hang and would always be a full time as for cement being made stronger will not stop it freezing this will kill the cement and turn it back to sand. Using old ridge tiles is fine as long as they are in good condition and have no Spalding Mick Weather tight Lofts

You can use additives to stop the cement freezing, as for if its been done right what does building regs say as its supposed to be inspected and signed of by the building inspector, this does two things it give you peace of mind its been done correctly & give you an official paper trail when it comes to selling the house,without this your new roof will not be recognized and may invalidate your insurance.
