Converting a light fitting

On my kitchen ceiling there is a light fitting holding three halogen bulbs. On removing the fitting I find four electrical cables emerging from the ceiling. Three cables are the normal 3-wire cables with live, neutral and earth. The fourth cable is a single wire with a blue coloured plastic sheath. I want to replace this fitting with a single pendant light fitting. How do I connect the existing wires into a standard pendant fitting to give one live, one neutral and possibly one earth wire?

it would all depend how it was wired before. do you have any images
