No quotes for certain areas of work then a large bill once work completed.

We are in the process of renovating a property. We have had a few issues along the way and learnt alot of lessons. The outstanding issues we have are: The builder we chose to do the work we chose as they verbally told us they could get the work done quickly, their quote wasn't the cheapest but we agreed to pay a little extra to get into the house earlier and for them to project manage the work. the work has taken triple the time we expected and been done to a poor standard and come in at a crazy price. they have outsourced 90% of the work and not inspected at each stage. we asked the builder to do 2 key jobs, remove a supporting wall, and install a new bathroom to the point of sanitary wear fitting so we could decorate . lots of issue with our builders but the key ones are: we didnt receive or agree to a detailed quote prior to the plumbing work being completed. we are now being charged £1000 for the following: a days labour to fit and remove old piping. not lots of piping just a small bathroom amount. half a days labour to fit a bath and a toilet. with the toilet later on needing to be fixed as it was leaking. We also didnt receive a quote for the plastering works: we are also being asked for £900 for a days plastering. they arrived at lunchtime on the first day and left at 4pm then came back for 4 hrs the next day to finish. they are claiming this was 2 days labour. we have been onsite throughout and have been noting the timings down. as we didnt agree a quote i'm not sure where we stand but don't feel obliged to pay for work we believe doesnt equate to the price being charged. any advice would be useful? do we have any comebacks as the work has taken longer then they indicated (as this was the deciding factor for us using them) and no project management being actively done. cheers
