Polishing Granite and drilling new tap hole.

We have granite kitchen worktops which are in need of polishing after years of wear. They are not damaged but need to be polished. Also, we have kitchen tap which has 2 pipes coming out of the granite worktop. We would like to blank these off with matching Granite plugs and then drill a new hole for a multi tap like Qooker which allows us the boiling water option. Is this possible to do? If so, who should we contact in our area?? We live near Watford, Hertfordshire. TIA. I need recommendations if this is possible.
