Deposit - to pay or not to pay?

I've instructed a builder to install a bathroom. There's a couple of layout changes + shower instead of bath. I've paid for everything apart from moisture resistant boards, plaster, plywood for floor, copper piping, fixing kits. I have a couple of questions - should I be paying a 25% deposit upfront? If this is the norm, how many days beforehand should I hand this money over?
Are you a tradesperson and able to answer this question?

A lot of companies ask for a deposit up front especially for a larger job.
If you need reasurance, check if the tradesman is a member of a registered scheme as a lot of these will cover any issues should your tradesman not complete the work.
Unfortunately Cowboys have conned people in the past and I would never recommend you pay In full until the job is completed for this reason.

If the tradesmen are confident of doing a quality job there is no need to ask for deposits if you have supplied toilet bath basin tiles etc
Do not pay in full under any sercomstances until the job is finished to a good spec
