Can I skim coat over plaster with ease-fill joint compound?

I've removed wallpaper and polystyrene from the walls and noticed that the surface is fairly uneven. I intend to fill holes with ease-fill but then considered skimming the walls with it as well. I'm inexperienced in plastering and read that this method is more forgiving (and botches can be rectified by sanding). I intend to put up wall shelves after decorating as well. Thanks in advance.

In my opinion i would not use that method, i would use multi finish plaster as the finish will be so much better
