How can I independently operate my hot-water and radiators?

I have a gravity-fed system with an old boiler. If I turn on the heating, the hot water is also turned on (and vice versa). How can I turn on one, without turning on the other? Especially to avoid wasting energy over the summer.
Are you a tradesperson and able to answer this question?

You should be able to independently operate both, usually can have hot water on its own or hot water and central heating together, it sounds like you have a faulty diverter valve
