Plastering is better. Gives a nicer finish when done well.
There is a lot of processes to tape and jointing and requires a lot of sanding.
If your reboarding because of Artex (assumption) you can get just as good finish over Artex if prepped properly

Skim finish is definitely quicker and a far superior finish, I can finish a ceiling in a couple of hours, regarding Ames taped ceiling, it will take several days to complete the taping of the ceiling and the internal tapes tend to blow after a certain time, and if it's hand sanded it can be very messy. Hope this helps

A plasterer should be able to achieve a good finish with tape and skim and you have not got the problem of drying times and usually can be completed quicker than skimming and you would be able to pint the surface quicker
If you are going to paint the ceiling and if cost is the deciding factor I would go with taping
