Is it possible to replace kitchen worktops without damaging the units?

Hi, I bought my flat with a fitted IKEA kitchen. The previous owner had bought kitchen worktops made of chipboard which quickly got water damaged and it upsets me to look at it. I would like to get a fitter in to replace the worktops with something of higher quality and leave the the rest of the kitchen alone. They appear to have been screwed in not glued so theoretically it should be easy to take them off, but I am a bit nervous about the units getting damaged and having to replace the whole kitchen. How likely is this? Also, will I need to buy a new sink or can we just fit the new worktop over it? Should I buy Ikea worktops to ensure the sizes are all compatible? And lastly, how many days should I expect it to take. There is one worktop over the sink, and another opposite.
