Will I require a new wall if I remove my chimney stack?

I want to get some work done to the house and the plans have been approved - its a mid terrace build in 1893 and has stone exterior and brick interior walls. I want a chimney stack to be removed from floor to roof - all of it gone and one builder has said I'd need a complete new wall from bottom to top. Is this correct? He also said I'd need a new ceiling as it's lath and plaster - does this sound right? He also said that because it's such an old house I may need new flooring when I tear down an internal floor. Any idea - do you need more info? Thanks for your help everyone.

No, you don't need to replace the chimney with a wall, you just need to extend the floors joists and floors on each floor, and roof line too. I have done this several times.
