Restoration of late Victorian front door

My original front door needs some TLC. I will be having locks replaced, new furniture, and eventually stained glass windows added in place of the modern glass. I want to sand down and paint it myself as I'm quite handy with a paint brush but my question is - do I need to strip it back to bare wood (e.g. using Peel Away) or just sand off any flakey bits of paint? It has a few layers on it as you can imagine from a 100 year old door but it's not awful. Thanks!

For a really good job it sound like you need to strip it right back.
