Currently have a very small sink ( stainless steel) without draining board fitted in Corian type of Kitchen work surface. Cutting quartz to fit a larger sink with drain board difficult? Who would do the job? plumber ?

I fit corian work tops quite regular and although it is difficult, it is achievable.
You would need a quality kitchen fitter to do this on site. It would be quite dusty even though you can attach a hoover to the router. Most kitchen fitters plumb the sink. You may need a spray enhancer to buff back up after sanding. Hope this helps.
