Plastering in-between wooden beams

We live in an old cottage which we are renovating. The ceilings downstairs are low, we've taken them down to rewire and found lovely old beams which we've had sandblasted. What's the best way to plaster in-between them without losing much height and leaving the beams exposed?

Plasterboard between the beams and replaster the ceiling ( ceilings) if they are in between the beams

I would use lime green insulation boards then plaster with lime as it can move with the timber. Plaster board and gypsum plaster is too rigid and will crack when there is movement. Also no need to paint
