Replace hot water cylinder and large tank with instant water heaters under sinks

1 bedroom electric only ground floor flat, I would like to remove the hot water cylinder/tank in the hallway cupboard and replace with two instant water heaters under kitchen and bathroom sinks (rooms DO NOT back onto each other). I think I will need to fit a new electric shower as the current one is fed by the main water tank. Removal of the tank will allow much needed storage space using the hallway cupboard! Flat is Economy 7 but I was also wondering if I could change this as I will no longer be heating water through the night and the room heaters are panel heaters (which I would like to change to oil filled). Do any plumbers have any experience of this kind of thing and/or any advice? Thank you
