What trade do we need to cut out a bigger hole in kitchen chimney

we are in our first house a 1920s terrace ex council house. In our kitchen we would like to use the chimney breast for our hob and insert an extractor fan and flue to use the chimney. However I am unsure what trade is best for this job I have tried to see an arch or linth and at the moment cannot see one I am unsure if the hole can be made higher so we can use it as desired. Advice greatly appreciated. In derbyshire

brick layers job.should be straight forward but hard to tell with out seeing the job first
