How would you remove redundant water tank pipes?

We are currently refitting our bathroom and there are some redundant pipes boxed-in in the corner of the room taking up space. The pipes go up into the loft and we're pretty sure they are from the old water tank up there that is no longer connected. However, the pipes are still connected to the hot and cold water that still serves the bathroom, but the T-junction up to the loft is redundant (if that makes sense). How would we go about removing these pipes safely?

You need to make sure they are not live pipes, I would suggest getting a plumber round.
