i bought a 2m laminated white worktop but only need to use 1m of it in this area, would i be able to change the appreance to a light brown via varnish etc?

In my opinion no, not successfully.
The laminated surface is designed to stop liquids penetrating or sticking, so i think you will have trouble finding a product that will last.
