I'm getting my chimney pointed, why do they need to turn off my gas?

We haven't been using our gas fire for a while as we have central heating boiler has its own flue as far as I'm aware, we had gas check couple of weeks ago.
Are you a tradesperson and able to answer this question?

They don't want the gas fire or boiler to be on for the time it takes the pointing to dry you want it to dry out naturally plus they don't want to be pointing a chimney with gas fumes coming out its not safe.
