Blown plaster - Is it worth removing the coving, skirting and stripping back to brick?

We have just moved in to a 200yr old former Pub and about 30% of the plaster is blown in a bedroom 3m by 3m. It is only cracked and chipped in several places the rest is fairly even and has a rustic look to it. I can tell the blown parts by the usual hollow knocking sounds. Is it worth removing the coving, skirting and stripping back to brick (one wall is lathe and plaster) and redo or is it not worth the trouble just to get a more even surface?
