Payment 50% deposit with vat and old obsolete invoice stationery which looks fake

Hi, quick query, wanted to have my 2nd floor bathroom updated and saw your site online. My query is, if I pay THE FITTER a deposit of 50%, would HE add vat on that? is that legal or normal? Just asking to help me decide which company to go with. Some plumber recommended by a friend of a friend said every deposit they put on invoice is with vat included, charge vat. So if I pay him 50% with vat, does that mean the rest is charge with vat again? so payment will be charged vat twice and I don't get that? He basically showed sample deposit with vat, then extra seal bought from a shop with vat, or extra sandpaper with vat, is that legal??? and the invoice was an old stationery with his dead mum as secretary saying he ran out of stationery, is that illegal? one more thing, do I have to pay his assistant? I am getting charge for labour for main man and another for his assistant, isn't the tradesman responsible for paying his own staff? I was told I would pay for each at £130 a day, and 2 weeks of that with vat, is that right or legal? please help :( --- Thanks AEB for your reply :) Payment quoted will be materials crown for kitchen, rocca for bathroom with vat, anyway, materials with vat, then 50% deposit with vat but odd is the labour fee, he said to write name of assistant in check not the company name, so why put invoice of deposit with vat%? his dead mum's name is on the invoice and when i queried it, he said ran out of paper. Yes he is VAT registered. 130 for assistant and 130 for him is 260 a day, he should pay his own staff not us... alarm bells ring when he said write a cheque with assistants name, but why charge us vat on labour invoice...How do I ask this guy nicely as he is a family friend in a way coz of friend of a friend group? Thing is, they do good bathrooms and would want to hire them, but why make us pay for the assistant and charge vat? his invoice will be labour for him for two weeks with vat, then deposit with vat then rest is for assistant 's name on cheque. My query is how do I ask nicely why?
