Should tiles be laid perfectly flat (in kitchen extension)?

I have just had a new kitchen extension built and the same building company have laid granite floor tiles with electric underfloor heating. Walking around bare foot for the first time I have noticed that in various places, adjacent tiles are not perfectly flat next to each other. So if you tried to slide your feet across the floor you would notice the height difference when your foot moves from one tile to the next. I would suspect that if you tried to slide across the floor at speed with socks on, some injury might occur! Is this sort if finish normal / acceptable? In total, circa 40sqmt of granite floor tiles have been laid.

On perfectly honed granite tiles a difference of about 1-1.6mm is acceptable but perfection is preferable

But if they are rough cut quarry granite tiles you will never get them to match, next time pick your tiles and see what finish you can come up which Regards Peter
