Does plaster in a kitchen/bathroom need to be different from plaster elsewhere in a house, due to the condensation caused in a bathroom/kitchen?

Not really however there is plasters like high impact plaster. Also I would recommend hard wall backing plaster in bathrooms if its down to the brick then skim.

I would recommend different type of plasterboard. The pink coloured fireproof one for the kitchen ceiling and the grey coloured waterproof one for the bathroom.

Different substrates requires different types of plaster so all depends on the surface.If it's back to brick then hardwall plaster or sand and cement is needed however, brick work on ground floor will need sand and cement for external walls like bay windows etc.
