Side extension wall leaks into kitchen ceiling

Would i still need to put cavity trays in if I decide to build up on too if single storey extension to just below existing house roof as no cavity trays were fitted in single extension

It would depend on how much of the wall is left showing if it is a substantial size then it would be necessary but why not connect with the roof at that point or are we talking flat roof here needs some one to look at it really

Yes you would need cavity tray if you are below roofline , thats the reason you have water ingress on side wall. also you need to check that foundation are strong enough to take another floor level. Plus you need to make sure builders install vertical damp on new extension to existing walls.
