Plaster around a fireplace

I've had my walls skimmed in my living room and there's an open fire I wanted to leave brick on the inside. Where he's plastered up to the edge it's not a smooth line, but bobbly and not straight. Do I sand it down? Or snap the bits off? How would you make it ready for painting
Are you a tradesperson and able to answer this question?
The best advice I can give you without actually seeing it and from how you've explained it then only thing you can do is sand it down with some fine sandpaper to where you think it will paint and look good a bit of trial and error, sounds like maybe he should have used some stop beads

If you snap the sections off it may be hard to control how much comes away from the wall and could cause it to be more uneven so would be best to lightly sand it down with a sanding block until its level.

I wish it was not a plaster but a cement rendering that the plaster cracks from the temperature. If it is plastered with sand and cement and the nut is straight and the plaster is cut straight, it needs another hand of plaster with more cement and it comes out as smooth as possible.
