Removing a ceiling

Hi. I am planning to remove the ceilings in a small single story cottage, to open up the roof space, currently it is boarded with loft space. I want to remove it all and open it up.
A. What would the approx price be.It's be on a 3 x 7 metre size.
B. What would be the best way to insulate the ceiling.
The cottage needs complete renovation.

The ceilling boards and/or plaster can be removed but the timber joists holding it can not be removed without re-designing the roof structure, insulation can be fitted between the rafters and over boarded or you can insulate above the rafter if the roof is to be re-done
